Join us for a one-day masterclass where you’ll learn all about the ways of wild fermented vegetables + fruits, and how to make them well.
Vegetable + fruit ferments are great for your gut and overall health, and tasty too – in this course you will master the different foundation techniques so that you can pickle whatever comes your way.
You’ll also make a range of ferments to take home.
We’ll work with seasonal organic produce, so you’ll learn how to adapt the techniques we’ll teach you to whatever fruit + vegetables are abundant, at any time of year.
You’ll leave confident to get krauting, pickling and more with whatever produce comes your way – for all year round, 4 season family health.
This masterclass will cover:
- Principles of wild fermentation of vegetables
- Gut health + the benefits of home-made probiotics
- Sauerkrauts and drawing brine from vegetables
- Hard vegetable ferments
- Brine pickles
- Wild fermented fruit chutneys
- Seasonal adaptations of both produce + technique.
This is a hands-on workshop, so bring your apron and prepare to get messy.
Throughout the day you’ll also be tasting all sorts of other delicious and varied ferment recipes from the four corners of the globe.

The knowledge and confidence to go home and get fermenting. You’ll also have a new appreciation of the role that probiotic foods can play in a nutritious and delicious diet.
The krauts, pickles + chutneys that you’ll make in class, as well as a host of great recipes + resources.
About your teacher:
Gillian Kozicki of Cultured Artisans is a seriously fabulous home-scale fermenter who first started fermenting in an effort to tackle emerging health concerns some years ago.
These days she’s got more energy than a twice-fermented bottle of peach tibicos, and is the perfect person to lead you through the foundations of fermentation so you go home confident and ready to make your own.
What to bring:
Bring a pen and notepad, apron and, if you wish, your favourite chopping knife. We’ll provide everything else.
About the venue
This course will be held in the workshop space adjoining the 107 Rooftop Garden in Redfern, Sydney.
The 107 Rooftop Garden is an inner-city food system full of vertical gardens, intensive veggie beds, aquaponics, beehives, dappled shady nooks and lots of hands-on opportunities to learn and grow good things. More about the venue here…
